Tofu Noodle Stew

Now that the winter chills have finally settled in, it’s time for some delicious Wholesome Goodness to keep us warm.  Veg stew is among my favourites and go to meals which finds itself on my table any time of the year.  At times I have it with basmati rice or as is or … or… NOODLES!!! This combo is just fabulous, there’s nothing better than slurping of some deliciously flavoured noodles …rite 🙂

Comforting Wholesome Goodness

Tofu Noodle Stew – Comforting Wholesome Goodness

Preparation:  15 minutes

Cooking time:  45 minutes max

Serves 4

250g Eggless Chow Mein noodles (prepare last)

1 tbsp (15ml) olive oil

½ tsp (2ml) cumin seeds

¼ tsp fenugreek seeds

1 tbsp (15ml) butter

⅓ cup celery stalks roughly chopped up

1 tbsp (15ml) fresh garlic finely chopped

1 tbsp (15ml) finely chopped soft red chillies (add more if you like heat)

1 small red pepper cubed (1 cup – 250ml)

1 small green pepper cubed (1 cup-250ml)

1 cup (250ml) carrots cubed

2 Medium potatoes cubed (2 cups)

1 tsp (5ml) black pepper)

1 ½ tsp (7ml) salt

2 medium tomatoes finely diced (1 cup 250ml)

3 (750ml) water (add extra should

½ cup (125ml) Italian flat leaf parsley)

½ fresh coriander leaves

1 knob butter

1 cup spring onions (green onion) sliced (garnish)


1 tbsp (15ml) butter

¼ cup finely sliced celery stalks

1 tsp crushed garlic

1 tbsp spoon crushed red chilli

300g firm tofu cut into nice bite size pieces

¼ Tsp black pepper

Salt to taste (about a ¼ tsp)

1 tbsp (15ml) rice vinegar

Let’s Cook 🙂

  • Heat oil in a pot on medium heat. Add cumin seeds, fenugreek seeds, butter, celery stalks, garlic and chillies.  Sauté for a few seconds.  Now toss in red peppers, green peppers, carrots, potatoes, black pepper and salt.  Give it a good stir and let it cook for 5 minutes.
  • Add tomatoes and cook until it tomato melts – 5 minutes
  • Pour in water and bring to boil. Cook until vegetable softens – (15 – 20 minutes) Once done add parsley, coriander leaves and butter
  • For tofu: Add butter in a saucepan.  Toss in celery stalks, garlic, chilli, tofu and salt.  Cook on medium heat until tofu turn slightly golden brown.  (5 minutes) add rice vinegar and cook for a minute.
  • Prepare noodles as per instructions on the pack. (Noodles take about 5-8minutes to cook)
  • To serve place noodles in a bowl, add a ladle or two of stew. Add few pieces of tofu per bowl and garnish with spring onions.   Chow down:-)

Hint hint #wink;-) you can smash a few potatoes to thicken gravy if you like 🙂
