Cauliflower Tikka Bites

Cauliflower has been trending for a while now; however this delicious vegetable has always graced my table on a weekly basis in one form or another.  I normally cook it along with peas or soya chunks mixed veg curries, Chinese style chilli fry or pureed into a sauce for my pasta – this is just to name a few ;-).  It’s been so hot lately and all I can think about is salads and something spicy to go along with it.  You can choose to eat this any way you like.  Super Tasty Cauli Tikkas!!!

Cauliflower Tikka Bites

1 medium cauliflower

2-3 tbsp (30-45ml) ghee (clarified butter)

½ tsp (2.5ml) asafoetida


1 ½ cups (375ml) sour milk or plain yogurt

1 – 2 tbsp (15 – 30ml) med – hot chilli powder or mixed masala

1 tsp (5ml) turmeric powder)

1 ½ tsp salt (adjust accordingly)

1 ½ tsp (7.5ml) coriander seeds

1 tsp (5ml) cumin seeds

¼ tsp whole black peppercorns

1 tbsp (15ml) fresh garlic paste

1 tbsp (15ml) fresh ginger paste

Let’s cook 🙂

  • Rinse whole cauliflower out in boiling water
  • Remove big chunks of florets and then slice into halves
  • Place in a steamer, steaming for 5-8 minutes (depending on thickness of slices) once tender allow to cool
  • Now roughly pound the following ingredients in a pestle mortar, coriander seeds, cumin seeds and peppercorns
  • Pour sour milk into a mixing bowl. Toss in mix masala, turmeric powder, salt, pound ingredients, garlic & ginger paste.  Give it a good mix.  Gently dip cauliflower pieces into marinade and place onto a separate plate.  (if you like you can marinade for as long as like before frying)
  • Heat ghee in a big heavy based frying pan or griddle. Pan should be medium hot.  Add asafoetida to hot ghee
  • Add cauliflowers and fry for 5-8 minutes on each side. (adjust frying time according to thickness of cauliflower slices)  You want them slightly charred on both sides.  Drain on a paper towel.

A Good idea 😉   *serve as is, just as a bite   *Serve as a burger    * Perfect to add to veggie platters     *Perfect for a braai! – place a piece of foil on coals before braai-ing in medium heat.
