Cabbage & Beans Jambalaya

Whoopa !!! So it Jambalaya on my veggietable today 😊 In this recipe I’ve used cabbage and red kidney beans along with the sweet bell peppers.  The Cajun spice mix along with the cayenne pepper is all that this dish needs, taking it from blah… to Blah D Goood …lol 😊 Recipe as follow:

cabbage & beans Jambalaya

Preparation: 15-20 mins    Cooking time:  35-40 mins  Serves:  4+

2 Glugs of Olive Oil

1 medium Onion finely chopped

4 large cloves garlic finely chopped

2 ½ cups finely sliced cabbage (cup measurement 250ml)

1 small red pepper finely diced

1 small yellow pepper finely diced

1 small green pepper finely diced

1 T (15ml) cayenne pepper (adjust more or less according to heat tolerance)

2 T (30ml) Cajun spice mix

1 cup (250ml) parboiled basmati rice (soaked in water for 15 minutes +)

50ml tomato paste

1 can chopped Italian tomatoes

1 t (5ml) sugar

1 can red kidney beans (drained and rinsed)

2 ½ cups (625ml) hot water

2-3 green chillies finely sliced (optional)

Coriander leaves or parsley to garnish

Let’s Cook 😊

Start by rinsing and soaking the rice in cold water for 15 minutes, minimum.

You will need a big heavy based pot with a lid, heat the oil in this pot.

Toss in the onions and fry until soft and translucent

Add the garlic and fry for a few seconds, then toss in the cabbage and sauté for 5 minutes

Throw in the red, yellow and green peppers – give it a quick stir

Add the cayenne pepper and cajun spice mix – give it another good mix and cook for 3-5 minutes.

Now, strain the water from the rice then add it to the mixture.  Once again give it a good mix – Cook with the lid on for 5 minutes.  Thereafter add the tomato paste, give this a nice good mix and cook for another minute.

Throw in the chopped tomatoes, sugar and beans,  gently stir this in.  Cover and cook for 8-10 minutes.

Thereafter pour in the water, cover with a lid and bring it to a rapid boil for 5 minutes then lower the heat and let it simmer for 10-15 minutes until all the water is absorbed.

Garnish and Sprinkle with green chilli for extra heat

And there we go the perfect veggie Jambalaya

Serve along with some roasted papadams
